Sara Cardellini
Biography
Dr. Sara Cardellini is a Clinical Nutritionist at IRCCS Ospedale San Raffaele.
After obtaining her Bachelor's degree in Biological Sciences from the University of Milan in 2015, she graduated with honors in 2017 with a Master's degree in Applied Biology to Nutrition Sciences from the same university. She also completed the State Exam for the Professional Qualification of Biologist, Section A (AA_080019) in the same year.
In terms of clinical and basic research, Dr. Cardellini spent several years at the Diabetes Resource Institute (DRI), focusing on the isolation and management of human cells (in vivo and in vitro) derived from peripheral blood and visceral adipose tissue. Her work included flow cytometry, cell sorting, cell cultures with lymphocytes and tissue supernatants, cellular suppression and stimulation assays, T cell signaling, RNA isolation, and immunoassays.
Currently, as a Clinical Nutritionist at IRCCS Ospedale San Raffaele, Dr. Cardellini provides nutritional consultations for patients of all ages, both with and without medical conditions. Her work includes oncology nutrition, where she assesses the nutritional status of patients both inpatient (as a consultant in the Oncology Department) and outpatient (also participating in clinical studies in the field). She primarily focuses on cancers of the head and neck, digestive tract, and lungs, adapting diets in relation to concurrent radio/chemotherapy treatments and/or surgical interventions, while also considering other existing medical conditions.
Dr. Sara Cardellini regularly participates in national and international conferences, collaborates with various companies (providing nutritional education, consultations, and scientific support), and trains students from various Master's degree programs during their internships at the facility.
